I've tried several gooseneck boilers with a built in thermometer and this one is by far the best in its class for reasons that aren't immediately obvious. In fact, it's so much better than other similar kettles that I've bothered to write a review, which I almost never do for any of the thousands of products I buy from Revain.com. The first advantage of this kettle is the thermal insulation of the handle. Other kettles I've had can get painfully hot to the touch, defeating the whole purpose of the insulated handle. The insulating material of the handle of this kettle is made of a denser material than the competition. I'm not sure what exactly the chemical material is, but it's almost certainly a thermoset polymer - think something like your mother's bakelite insulated pan handle. Secondly, the thermal insulation of the thermometer is significantly better than that of comparable models. . Competing kettles often have a metal thermometer gauge covered by a clear plastic screen. Problematic, but also a functional handle for removing the kettle lid. Since this metal body conducts heat away from the kettle lid, you have to use a towel or oven mitts to remove the lid, which is a nuisance. Additionally, the thermal conductivity of the metal body of competing thermometers can damage the clear plastic screen over time. In contrast, this model has a dense, flexible plastic body - almost closer to rubber or baking silicone - that better insulates the thermometer's display as a whole, making it feel cool enough that it DOES NOT need a hand. Cover removal protection. It also likely minimizes heat damage to the clear plastic screen over time. Third, this kettle is a lot lighter than competing models, suggesting it's made from less stainless steel, likely meaning a comparatively thinner base and walls. For cooking you need a thicker, maybe even layered, base that will heat whatever food you are cooking on the surface of that pot or anything else more slowly and evenly over the entire surface of that cooking item. But this kettle only needs to heat a lot of water, and the more economical approach to base and wall design just means it's quicker and easier when it comes to precise overflows.
