It's Cast Iron: Kitchen & Dining

I have had no problems with this product. I have read many negative reviews and I feel very ignorant. With EVERY piece of iron I get; I ignore everything the manufacturer says about the product. They just don't want to be sued, and we're a very litigious society. I first clean each piece of cast iron with SOS or Brillo sponges. You have no idea what the manufacturer seasoned the metal with. "Pre-cure" sounds nice and convenient, but do you really trust the manufacturer to properly age the iron? I don't trust them. I spend the day with a new piece of iron because it's very important to me. (I can wipe my bum too.) I brush it to gray metal. I dry on the stove. I open all the windows. I grate a piece of Crisco (vegetable oil); Crisco only (shortening, no butter). I cook it in the oven at 375 for an hour, with foil on the bottom shelf to catch the excess oil. Turn off the oven and let it cool down. When cool enough to touch with bare hands, cover again with Crisco; back to oven 375 or 400 (sometimes I raise the temperature on a whim) for another hour. Turn off the oven and let it rest. If you wipe it off with a paper towel while the crisco is still a little fluffy; this makes the surface smoother. Nothing but constant use and re-seasoning will smooth it out. Nobody makes cast iron like they used to. Iron pots and pans used to be sharpened to keep the surface smooth. Nowadays this step is skipped. If you use it often enough and clean it properly (wipe with paper towel, rinse with water and scrape with paper towel or nylon scraper, dry on hot stovetop, add oil as needed; pan should be shiny when storing) you have the frying pans have a nice smooth surface for cooking. This pot is just amazing. Oh, if the iron comes out a little rougher than usual, I used wet/dry sandpaper. On some abandoned parts I use a power sander if it fits. Take it apart and assemble it yourself. If you know what cast iron is, this shouldn't come as a surprise. If you're offended by what I said, it wasn't my intention. I'm just trying to convey what I know works. If this statement doesn't help you get rid of your grudges, then you deserve it.
