Bought a medium sized grater based on Cook's Illustrated Reviews. I've also spent some time reviewing Revain, but I'd like to pay more attention to complaints of harshness. This grater is stupid. Dangerously boring. The first task I put on the grater was to grind the sharp cheddar. It was a nice, firm piece of cheese straight out of the fridge. Something you would expect to have a little resistance when rubbed, but it will come out in even, consistent clumps. However, instead of a little resistance, it took so much force to get the cheese moving that I was afraid I'd either bend the grater or slip and cut my hand instead! I decided to check the sharpness of the grater on an apple shredder. It was a Fuji that I kept in a fruit bowl for a couple of weeks - not as hard as a fresher apple, but still hard enough that it didn't give way with a light squeeze. The grater struggled to penetrate the skin, and once it did, the dull blades tended to mash the apple rather than shred it. I really wanted to like this grater but I just can't. Overall it looks good and the materials themselves are thick and durable, but the lack of sharpness is disappointing. I took a round file in the holes to sharpen the blades but it was slow (which may indicate the thickness and quality of the steel!). Until I sharpen my blades, I don't risk injuring myself from an accident caused by a dull grater.
