Review on 🔪 Oxford Chef 3.5 Inch Paring Knife - Best Quality Damascus Japanese VG10 Super Steel, 67 Layer High Carbon Stainless Steel - Razor-Sharp, Stain & Corrosion Resistant, Exceptional Edge Retention by Jamie Rogers

Just act! for kitchen and dining room

Paring knife Nicely made and very sharp. In the hand it feels heavier and more solid than my old Wüsthof Icon paring knife. VG10 steel feels harder than Icon steel. This is said to be the difference between Rockwell 62 and 58. Each step on this non-linear scale is about 3.5%, so the difference should be less than 20%, but I found it stayed sharp longer. I liked it so much that I immediately ordered two more knives (with coupon "VIP25" - 25% directly on the Oxford website) - santoku and bread knife. My Wüsthof bread knife is worn out and the santoku blade is very close to the notches (the notches are recessed further up on the Oxford santoku). Again - impeccable quality, sharp and beautiful in appearance. The pens are resin, but the printing on them makes them look like wood - much nicer than Wüsthof Icon's glossy plastic pens (Icon makes the wooden grip version much more expensive). Some people may prefer lighter knives, but I can get used to heavier knives that give a more consistent cut. I have examined them all carefully, trying to find a fault, but they are flawless. For a fraction of what I paid for a similar Wusthof badge, this is a steal!
