The thickness of the paste is critical - too thick and the rolling pin won't cut through the gullies

Easy to use. Works as advertised if you follow instructions to avoid overflowing. However, if the pasta sheet is too thick, the rolling pin will not cut all the way through the ravioli and they will have a hard time sticking to the pan. Then you will crush the rabbis and try to get them out. Also, a very light layer of sprayed oil will help remove them by tapping the mold firmly on the countertop. However, with a fairly thin pasta dough and filling the cavities ONLY AT THE TOP OF THE MOLD, the system works well. . We prefer an egg wash over just water to seal two layers. Oh, and while you're rolling out the pasta dough, keep the rest wrapped up so it doesn't dry out prematurely. To keep the raves from sticking together, cook them immediately or toss them lightly in cornmeal (which will float while cooking).
