I bought this to enhance my sous vide setup as my small butane torch just wasn't producing the heat I wanted. If the butane wasn't hot enough, it will get too hot. My previous attempts at roasting have had mixed results and usually end with a small loss of flavor as the edges, corners and any wood shavings that are slightly protruding burn crispy. Simply salting before frying or carefully removing any herbs (or tying up herbs to remove later) is an absolute must! Knowing how to keep the flame moving, being patient, keeping the flame away, and moving slowly will definitely help you achieve a more even burn and less burnout. Overall I think the burner does what I expected it to do, but I didn't expect the steep learning curve in use would be.
