It omits the 400 or 600 stone, which is rough and is used for large serrations on the blade, and makes up for the lack of rough stone by including an exceptionally fine 6000 grit stone. 6000 grit is overkill for most knives . You will probably spend most of your time on the 1000 side. These bars are used in wet conditions. Soak them in water for an hour before use. They are not designed for dry use and are not oil lubricated. Start with a damaged blade at 1000. A grit finer than 1000 is usually reserved for specialty tools, not your average kitchen or outdoor knife. 400 grit is for repairs when the edge is really scratched and in bad shape. First use 400 to base the edge, then 1000 to sharpen. Nice set of whetstones. The kit includes a leveling block to reduce protrusions and bumps on whetstones. To use a whetstone, run the knife across the block, blade forward, as if making a sweeping forward motion. Don't push hard. Your line should cover about half of the sharpening stone. Switch sides between every few hits.
