I used to do a lot of canning and Chicago cutlery was used exclusively in my kitchen. I've been looking for steak knives so I don't have to constantly use my worn out chef's knives. It was a pretty good price and having always been happy with Chicago, I didn't hesitate to buy it. However (to save money I'm sure) the handles are much shorter than they were and I can only cut comfortably with three fingers. The knives are very sharp, which somewhat compensates for the ergonomic inconsistencies, but not always as sharp as they came from the factory. I would also like to point out that my hands are remarkably medium sized. Won't be buying Chicago Cutlery again.
