I've used them to serve and store cooked dishes - great for hummus for example. It also works well for ready-made ingredients that can be used immediately in cooking. At first I thought it might be a coating but I scratched the underside of one with a tool and it doesn't look like it's there, just nicely finished stainless steel. Elsewhere I've searched (in the product description) for "pinch protection eyelets" because I don't see anything that I call an "eye". Anyway, turns out it's a cooking term for the shape (and finish?) of the rims of hotel pans, designed to be stackable and not snag when trying to stack them. I saw a forum post from a kitchen worker saying that some types can be quite a chore when stacked on top of each other. I got 4 stars from me because this is after all a relatively normal product, although as far as I can tell it is of excellent quality. I reserve 5-star ratings for truly outstanding items. I often buy things with 4 stars.
