Inaccurate reading of temperature above 200 oC

These thermocouples were advertised as operating at high temperatures (500 C I think). They measured boiling water fairly accurately, but when I tried to take the temperature of the soldering iron, the readings were anything but normal. Various thermocouples are shown on the packaging and they appear to be rated at 203C. The supplier should state this clearly in the product description. If you only need temperatures up to 200C, they may be fine.
