surgical sharpness. Respect this knife.

Amazing knife. Unfortunately, you have to be very, very careful. Cut my finger twice with regular use (i.e. not stupid). The first time I brushed the minced garlic from the side (a method I used all the time before). I think one of my fingers got close enough to the edge. The second time I cleaned the knife, I hooked the blade back into place. This knife can completely cut off a limb. So I'll start far from its edges now. I use a sharpener before each use, which I find helps a lot. I wash, day and store after each use because I don't want anyone else in the family to handle it. I would never put this in the sink with other dirty items for the reasons above. I'm obviously not a trained chef so these might be the precautions you need with any quality sharp knife. I'm very glad I spent the money on this and not a set. Also, treat this knife with respect and don't abuse its sharpness to open boxes or cut bones. It's too pretty for that and I love the ease with which I can chop onions and tomatoes.
