Firstly we didn't have the scratching issues that others have reported, ours was spotlessly clean with an easy to remove sticker and we cleaned them first. We used this pie pan to make a quiche based on Melissa Clarke's recipe from The New Essentials of French Cooking recommending this metal quiche with a removable bottom. A trick after we oiled the pan (before putting the rolled out dough in) was to put it in the freezer for 5 minutes to let the oil harden and give a rough surface to test. remove. We did NOT cut it at the metal button, but instead pushed the quiche onto a wooden board to serve. This product works well and is worth every penny. We ordered a second one to make enough for more people.
