Review on OXO Adjustable Handheld Mandoline Slicer by Theresa Lewis

The perfect potato chips!

I love this handmade mandolin! I failed on the first try but succeeded on the second. When I first used it, I set it to the thinnest disk and tried to do it quickly à la Anne Burrell. The resulting slices, while thin, were uneven - most of them were crescents. I baked chips and they stuck to the pan because they were paper thin. On my second try, I used russet potatoes and yams and placed the thickest slice on top of the mandolin. I also wasn't cutting as fast as I used to, so I have more control over my down moves. The result is perfect slices! This time I fried the fries in an enameled cast iron roaster at 350 degrees. It took about 3-4 minutes to brown. Yams cook much faster. Tip: The mandolin is pretty narrow, so I tip the potatoes to get longer slices. I hold the potato with my hand, but when it gets to 1-2 inches thick I use the hand guard. All you need is common sense when using this product. I've never had a problem with food getting stuck under the blade and I've never cut my fingers. Overall I am very satisfied with this product. I have a food processor with a chopping attachment, but I don't want to mess with the food processor unless I'm cooking for multiple people. Too many things to take away. This mandolin is ideal for cooking for two as it is very easy to hand wash. 100% recommended!
