Just right for a cheesecake in the pressure cooker.

Bought this Instant Pot cheesecake pan. The perfect frying pan. I have an IP-DUO80 (8 liters) and was wondering about a 7" vs 8" pot (which would fit); I'm glad I went with a 7" pan, it seems like 99% of pressure cooker cheesecake recipes are written for a 7" pan. Fits perfectly with the stand that came with my IP so it's easy to remove (8 inches would be tricky as you'd have to stick your oven-gloved hand in there). The tray is well made and fits snugly when snapped into place (not sure how airtight it would actually be with a water bath in a regular oven; not a factor on PC). cut directly on it if you are not using a plastic knife). The bottom of the pan sags a bit when I mash the cracker crust; I was a bit embarrassed when I made my first cheesecake, but whatever: now I either put the pan on my other hand to create counter pressure, or ignore it because it doesn't crack the crust anyway. The pressure cooker came with one supplied very cheap cheesecake pan (you could push the bottom out when the pan was closed); So glad I have this and will be recommending it to her b4, she bakes a cake on the floor. below) Baking Sheet: I'm a seasoned baker and I still get a little nervous handling cupcake tins; I always feel like I'm two seconds away from accidentally hitting the bottom dial. The springform pan is much easier to work with: important on a pressure cooker cheesecake, as the PC stand can have metal wires that stick up when the handles are extended (in the area where the handle wire wraps around the base wire); I'm not sure if these spade lugs can lift the bottom pane, but I'm not interested in taking the risk.
