Zyliss Smoothslizer Vegetable Pasta Maker and Spiralizer with 3 Interchangeable Blades takes some time to read and understand the instructions. Things don't seem to snap as easily as one might expect, so extra care needs to be taken around the blades. It will definitely become more user friendly with practice. You want a smooth bottom suction surface that will hold up well. This little machine failed the first time I tried to cut squash and nuts into lasagna sheets. The skewer became ineffective as it crushed the center of the gourd. The same thing happened to my zucchini. When I tried again with a smaller squash, it got off to a rocky start, but then magically morphed into a 7-foot length of "nut squash lasagna noodles." It was pretty impressive! Then I pulled out a younger, firmer zucchini than the first one I had used and tasted it. This was another setback, as the food fillers re-crushed the squash, allowing it to spin freely on the pole and the slicers unable to catch it. When I tried the same zucchini as a noodle versus a lasagna blade, I was able to make good noodles out of it before the squash stopped spinning. This leads me to believe that just a very young, very firm zucchini will do, but because it's smaller it really won't make a lot of pasta. Then I tried turning the beets into pasta. It worked like a dream. It was a small beetroot, so the next time I tried, I pricked two of them and that was also very successful. Everything can be packed and stored right on the device so it really doesn't take up too much space. It appears to be very well constructed, but I understand that it may not have been ready at prime time and was not effective for all its intended purposes. However, when it works, it works well, it's convinced me it's in the user/vegetable lover's kitchen arsenal.
