Review on Matfer 17360 Exoglass Bouillon Strainer by Jennifer Katz

Excellent, high quality, durable Chinese version with a very fine mesh. Strong enough to withstand the preparation of big-boned veal stock and thin enough to create a beautiful, translucent, gem-colored jelly. Two hooks give it the long-awaited stability when moving the contents of bulky pots. Its size can be an issue when finding a suitable container for collecting screened liquids, as other reviewers noted. After doing a little research I bought an 8 liter round polycarbonate Cambro container with a lid. With an inner diameter of 8.5 inches and a height of nearly 11 inches, this container comfortably and sturdily holds Chinese clothing by Matfer. Chinese style can be stored in a container to save closet space. A year later, the Matfer still looks like new. It's so beautiful it almost invites you to adopt any recipe the French laundry has to offer. My next project with this villain will be straining herbal oils. Love it. The investment is definitely worth it.
