Very good. but very high! (And the matching stand is weird.)

This is a really good Shinua. It's solid (despite the plastic handle/rim), is okay, and stretches just as you would expect. Two things to note: 1. He's really big. None of my 8 or 12 liter pots can hold it up. (The bars around the top of the cone touch the bottom of the pan long before the hooks around the rim of the strainer can reach the rim of the pan.) The same goes for my largest bowls. That means I'm pretty much holding it in my hands (which can be tedious and almost impossible when…

The right tools... the right job.

Mafter is a French brand that makes and sells a lot of great cookware. Their products aren't cheap, but they're worth it. I've used a few Shinua at work and own a Mafter and another cheaper nameless stainless steel for home use. Comparing a cheaper car to a Matfer is like comparing a Yugo to a Rolls Royce. The quality of the materials gives this Matfer product a 5-star value for money. For many years I have been using Chinese cap fine-mesh filters to speed up the clarification process of raw materials. Excellent, high quality, durable Chinese version with a very fine mesh. Strong enough to withstand the preparation of big-boned veal stock and thin enough to create a beautiful, translucent, gem-colored jelly. Two hooks give it the long-awaited stability when moving the contents of bulky pots. Its size can be an issue when finding a suitable container for collecting screened liquids, as other reviewers noted. Great for yogurt and bone broth

I use it at least once a week. I mainly use it to strain homemade yogurt and occasionally chicken broth. This is a very fine sieve. Very little yogurt is sifted along with the whey. I turn a gallon of milk into yogurt. This screen must be filled twice for the entire batch. I usually let it strain 1/4, which takes about 45-60 minutes when the yogurt is fresh out of the preheated oven. It turns out about 2.5-3 liters of yogurt.
