Review on Matfer 17360 Exoglass Bouillon Strainer by Sophie Martines

Great for yogurt and bone broth

I use it at least once a week. I mainly use it to strain homemade yogurt and occasionally chicken broth. This is a very fine sieve. Very little yogurt is sifted along with the whey. I turn a gallon of milk into yogurt. This screen must be filled twice for the entire batch. I usually let it strain 1/4, which takes about 45-60 minutes when the yogurt is fresh out of the preheated oven. It turns out about 2.5-3 liters of yogurt. If you reduce it too much, you end up with dry, thick yogurt. Straining bone broth is very easy. This will ensure that all small bones are captured. It's large enough to fit through the bones of a whole chicken. Pros: - it's big, which reduces sieving time - it can be washed in the dishwasher - tolerates high temperatures well - durable - the wires that protect the sieve work well. Cons: - it's big. Depending on your kitchen, it may be difficult to store. Because of its size, it's really difficult to strain when hanging even in a big pot. However, he stands and leans forward when he exerts himself. It can be difficult to clean the fine mesh. I use a kitchen sink sprayer and then put it in the dishwasher. The price is a bit high. Overall this is a great purchase and I am very happy with the product. I can't imagine making yogurt without it.
