You can use a cracked shell and pour the eggs back and forth in the shell, being careful not to break the yolk, pierce the jagged edge of the eggshell, or fall under the egg white into the bowl. Or you can use your hands like I did before. Yay! That was until I got this handy stainless steel egg separator. I used it today while making a taco omelet. It works like magic - the yolk stays on top of the spoon while the whites slide through the holes in the spoon and into the bowl below.
