Attractive, compact crock that is good for small batches, mine has an interior glaze.

This is a beautiful, well designed pickling/fermenting crock that is just the right size for small batches. It isn't too heavy and will easily fit in the refrigerator once the fermenting process has been completed. It is the type of crock that uses a water moat to seal the food to be pickled/fermented during processing, so it is important to check the water level every day or two. I have several two and three gallon pickling crocks that are made in the USA (Ohio Stoneware) that are very similar to the ones my grandmother used decades ago. I haven't found any crocks smaller than one gallon that are made in the USA, but when I saw this 2-liter version from China, I was definitely willing to give it a try. The product description states that only the exterior of this crock is glazed, but the one I received is definitely glazed on the inside as well. There is no information on the nature of this glaze, so I am a bit concerned about food safety. There are no instructions included either although I imagine most people ordering a fermentation crock are at least a bit familiar with the process. I don't need instructions, but I do think at least a basic overview should be provided. The crock arrived well packed in a sturdy box and in perfect condition.
