No matter how much I cooked in this pan, the handle never got hot, not even the part covered by the pan. It only gets hot when I put the pan in the oven. The variety of dishes I've cooked in this pan have always been delicious and never stuck to this pan. Even when cooking fish, shrimp or scallops, nothing sticks. When it comes to cleaning, I do a light cleaning, never scrub it or put it in the dishwasher. Instead, I use a soft sponge and it cleans it up really well. I've even cooked steaks in this pan and then popped them in the oven to finish cooking. No matter what I use this pan for, it's really easy. I've even tried the egg test, which involves placing an egg in a pan with nothing in it and swirling the egg around in the pan. The good thing for me is that this pan comes with a lid.
