I've owned a Chevy for years and have never had one with oil pressure over 40. My 2005 Silverado 5.3 had a leak around the o-ring and the oil pump gear was loose. When the truck was cold, I lost pressure and the engine started knocking. It took about 20 minutes of continuous driving for the oil pressure to get high enough for the warning light not to come on. I shut down that heavy duty pump and switched to synthetic oil. Now it idles at 40 when warm and runs at 60. When still cold and running it hits 80 while driving. It's not an easy or cheap setup, but if you have it give it a 10 -20 dollars more and get this high-performance device.
