I used to bring knives to my father's house to have them sharpened on one of the Chef's Choice machines. Maybe it was the same in white. Anyway, after a SLIM offer for some time, I finally got my own for Christmas. I've had it for almost three years now, so perhaps my delay in writing this review will pay off for those of you who want to know if things are still good after a while. I thank the dispenser every time I use it and it sits right on the kitchen counter next to the knife holder and the knife box is always ready. When the blade isn't going through the skin of a tomato, I run it through this sharpener briefly and it cuts very well, or not very "well" if your finger gets in the way. I cut my fingernail. Blades can be that sharp. However, a dull blade is more dangerous. One reason is that dull knives require more strength, which can lead to accidents and, at the very least, disappointment and possibly messy eating. I rarely use serrated blades, but this also sharpens their edges. I don't have heavy iron/carbon steel knives (whatever they are) but I think this device will take care of that as well. Works great with stainless steel blades. The engine is strong and never stalls. Clear instructions tell you which wheel (or two) to use on which blades. Guides make the right angle reliable. (I can't speak to some specialty knives with unique angles.) I know I'll never handcraft a blade like Chef's Choice using equipment designed for the process, and I'll never try again. if I can do it in seconds with this machine. It's easy to use and I really enjoy it every time I turn it on right where I usually cook. "Joy" sounds a bit trite? If you really love cooking, I bet you know what I mean. I will never be without it again, even if I have to buy one. However, that prospect is unlikely as this sharpener looks like it will last forever.
