Nice Sharp Knife - Chef's Knife

I bought this knife about a month ago and I really enjoy using it. It's hotter than my Parer Wüsthof! I bought this to replace a rusty carbon steel knife that I gave to Goodwill because the wooden handle was cracked. Ever since I gave the knife away, I've been able to kick myself. I missed the sharpness. That's what knives are for - remember! Forget the hype and glitz of fashion brands. My old, rusty carbon steel knife surpassed Wüsthoff's sharpness - no problem. (Yes, it's hard to admit after spending money on Wüsthof and expecting it to be hotter). And the Dexter knife is heavier than my 8-inch Komachi chef's knife, which seemed too light for certain cutting tasks like slicing cantalope. Despite their sharpness, Komachi blades were sometimes bent. So I decided to look for upgraded carbon steel. Knife - I couldn't be happier with it Dexter Russell got it right with the V-Lo - a good compromise with just enough carbon steel to give it a razor sharp, durable blade, but it doesn't rust like my old carbon steel knife. My knife is still shiny. The knife has a good weight, balance and grip. Just don't throw your carbon steel knives in the dishwasher - save them for duller stainless steel knives. I prefer sharp to stainless. I would definitely buy another Dexter-Russell V-Lo knife made in the USA!
