I like that it's big and I can cut it to the size of the container and even double it. I mainly use it when making seafood broth for bouillabaisse and choppino. I've never had a problem with shrimp or crab shells. I make 8-10 gallons at a time and straining is quick when the cheesecloth covers the container. I remove most of the heavy solids with a large slotted spoon before straining.
