great price just not the knife I want

Great quality, easy to clean (all metal construction) and a little heavier than expected. I wanted to try a lightweight paring knife in the kitchen and this is a great way to do it. I have found that when slicing very thinly (e.g. when slicing garlic) the height of the blade makes it a bit more difficult to get thin and even slices. If you try to go a little over the edge, I find that the high height lets the edge go too far too easily, giving you a much thicker cut than you'd like. So for this task I use a chef's knife instead - it's smaller in height, easier to make an even cut while rotating the blade for thin slices. In addition, the flat/polished sides make slicing potatoes nearly impossible. Wet potato slices stick to the blade edges like glue and must be removed with force. I guess I'll have to use a santuku or a chef's knife for that as well. Bottom line, this is a lot of knife for the money, but this type of knife has minimal utility in my kitchen. If I made more peppers, carrots, celery, or similar veggies, I would benefit more. If I'm cooking for one or two people, this isn't the best utility knife for my needs. (8" chef's knife) For the money, it's still worth having, just not as versatile as I was hoping and takes up a lot of drawer space. Doesn't come with every case or edge guard method.
