We bought this without fully understanding how it works. We just bought brand new Calphalon pans, and as with all quality non-stick pans, you must avoid all aerosol spray cooking sprays (they will ruin your pans). Use only olive oil (or the oil of your choice) and air. I was pretty cautious at first as you have to use the cap to manually pressurize the atomizer. But it worked really well for us. I'm surprised how little oil we use for cooking these days. The only catch is that over time clean oil of any kind will build up at the nozzle and require cleaning. By running some hot tap water through the sprayer you should be able to clean it out fairly easily. I have no problem with overspray and 4 or 5 sprays will easily cover a 12" overpressure pan. Always remember to loosen the top to relieve pressure and leave loose until next use. Pressurized seat destroys the small rubber seal in the lid fairly quickly. The idea of adding some herbs to infuse the oil is a good one, but we're not worried. Add herbs to the food and the oil will be pure. In general I am satisfied with the purchase. How long it will take. I think you'll be lucky if you live a year before the seal fails or becomes too clogged to clean. This is the only reason for 4 stars.
