The response time is very fast and seems accurate, when I check the same meat with the various thermometers we have they all come back to about the same temperature but you should always calibrate your thermometers regularly to get the correct readings receive. There is a great menu setting for those who don't know the exact temperature and can choose the doneness and meat type and also notify you when it's ready.
