These are some of the worst salt and pepper mills I have ever bought. There is little control over the consumption of spices. The clockwise grind should be fine, the counter-clockwise grind should be coarse. Either way, you're getting a lot of salt and pepper. Poorly made. Don't buy this. Too bad I didn't wait for Cooks Magazine to publish their review of Cole & Mason Derwent coffee grinders. I think I'll pay a little more and buy them next time. One of the two mills originally had a very free grinder. I could say it before I peppered it.
