Let him grow old and you will be rewarded.

I brewed this beer 1.5 years ago and it came out excellent. I stored it in dogwood for a year in the basement at an average of 65°C to allow it to mature and settle. After transferring to a keg to chill to 35°C and carbonate at 5psi for 2 weeks I tasted the beer. I'm always shocked at the transition from one style to another and the anticipation has me waking up after more than a year. It was well carbonated with 2 volumes of CO2 and slightly sweet. Just a hint from that side, but after a few months it got better with age. This beer was easy to drink but not for the faint hearted. The ABV was around 8 and not monstrous, but it's a well-rounded beer that does the job. Beautiful lace, beautiful lather and harmony in style. I had a request to bring this drink back on tap and I said ok but it won't be ready in a year! Yes, you could drink this bad boy for 4 weeks from the day you brewed it, but that would be a disappointment in my opinion. It needs to soften and you will thank yourself for letting it grow old.
