I buy my spices, herbs and condiments from a great catalog/company in a limited location (*cough*Penzeys is a must) and they are fantastic. Fresher and cheaper than regular stores. Did you know that bay leaf has an actual TASTE? Not me. I was distracted. The only downside to these spices is that they are not overloaded or contaminated with release agents or preservatives. So if you use them daily (Hello Mural of Flavor & Pie Spice!) then that's no problem. When it comes to a lesser-used but still popular spice, this can be problematic. I added a packet of silica from my turmeric supplements to the baked turmeric spice and it really helped. Buying them was a brilliant move on my part (thank you, me) because they are fresh and ready to eat, not pre-used. I wish I could take a picture but my pico fruit mix was tough. I used a knife to dig a hole in the center, pocketed one of these and overnight it became a lot looser. This particular spice may need to be replaced with a silica gel bag once or twice before it flows well, but my ground shallots, which are also tightly packed, flow freely throughout the night. They are packaged in a heavy duty vacuum plastic bag with a zipper on the outside. I had to break the vacuum to open it, but I squeezed the air out and folded it up, then squeezed the air out of the zipped bag before closing it. I'll probably pack the inside bag before putting it in the pantry. Perfect size for a spice bottle, they work well and I'm so glad I found them. Definitely part of my pantry routine from now on.
