Wow! I only bought these because I gave away some Victorinox paring knives for Christmas and the person called and said they were really, really good. So since I have a chef's knife I thought I'd buy a boning knife as it's good for tomatoes and fish too; and cheese comes out Super hot, light and versatile. Holds an edge well and is easy to sharpen with my chef's choice sharpener. (which I bought cheaper than these at Target).
