Disappointment in cutlery and knife accessories

Bought these to replace a similar pair of knives bought over 40 years ago which have faded over the years leaving only one. In the frontal test with an old, blunt remainder of a knife, they left a lot to be desired. While they cut the pork chop to perfection, they made very little progress through the watermelon rind (in fact, their most common use in our house). This sharp difference was very disturbing. Although they seemed sharp, I pierced them with a sharpener and there was little difference. I ran the sander one at a time to touch the edge, little difference. Eventually I took out my caliper and the difference became pretty obvious. The blade of these knives is 50% thicker than the original, while the edge is ground to about the same length. I believe that wedge instead of blade is the reason for so many breakage reports. They work their way through the material and eventually the pen gives up. I took one of these back to the sharpener and changed the bevel of the edge to match the antique (except for the point), and the resulting blade slices cleanly and safely through the skin of a melon with almost the same force as an antique knife. After that I repeated this reshaping action on the kit and threw out the replacement kit I had already found from my trash. I will not buy again. I would try to find knives that didn't require a visit to my workshop to work properly, but based on past experience the next set will be needed when we're well past 100 if they last!
