Assembling is easy enough but problems started almost immediately. The wing nut on the left was tight, needed pliers to turn it while trying to loosen it back up to remove the tofu. The first block of tofu was still too wet despite repeated puffs and 30 minutes. On the second try, with two blocks of tofu, the tray was too flat to hold the spilling water, a crack appeared at the top, and a struggle to loosen the left wing nut ended with one of the two blocks landing on the end of the kitchen floor. I removed the hardware and threw it in the litter box, put the bottom tray in the bathroom to store small items, and left a drain tray that at least drains the water well as the only useful part. This, on a shallow bowl, with a small cutting board on top of the tofu and my heaviest bread bowl on top, made the job of making tofu 10x better without having to go back and set up something to combat the equipment. .
