I use these thermometers on air conditioners in our lab to monitor inlet and outlet air temperatures. This allows me to check the function of the blocks with just one look at the display. Once you determine what "normal" readings are, it's easy to tell when a problem is starting to develop. If the normal coolant supply temperature is 44 degrees, a rise in temperature to say 50 degrees would mean that either the coils need cleaning or the unit is running out of refrigerant. Problems on the heater side will also show up as a lower reading of the normal heater temperature. In my hot water system, I use one of these thermometers to monitor the outlet side of the water heater versus the return line from the circulating system. Typically, the difference in readings is only a few degrees, with the exit side being the highest. A large difference likely indicates a problem with the circulation pump.
