I bought this to make homemade dumplings easier. This was a project like rolling dough by hand, so I was hoping something would help with the process. Wow, I found my solution. This is a great product. The dough needs to be flattened/rolled out, but only in a way that makes it easy to serve. I've found it's important to make sure your dough is floured on both sides before putting it in the machine. I make dumplings very thin. I get exactly the thickness I like by continuing the process at level 1. As long as the dough is floured on both sides each time, I've had no problems. Unless floured, it seems to stick to the roller mechanism a bit. I halved the time it takes to cook dumplings! This car is wonderful! For brushing, if needed, I use the brush that comes with the side of the spatula. The new version washes off well, but I honestly haven't tried it. I changed the thickness settings when brushing which I think made it more thorough. In any case, I am very satisfied with my purchase.
