I live in a very rural part of Maine. I LOVE Ethiopian food. If you guessed there weren't any Ethiopian restaurants near me, you're right. I learned to make my own, including injera (surprisingly good for a middle-aged white Maine woman). After using skillets, which is difficult and not exactly the right size or shape to take out the finished product, I finally got this skillet and low domed lid, a lid is essential for cooking injera. I LOVE this pan, it makes the best injera! I've read that most people recommend Silverstone for manufacture, but I went with uncoated satin aluminum. There were no sticking issues and I don't have to worry about peeling off. Two thumbs up for this pan!
