It is like a gift when you receive a product that you have ordered and it is well received. I had my doubts but I bought it anyway. I don't like the idea of baked plastic, I don't even have silpat. I have previously bought a Du Buyer which costs 3 times as much and had to send it back thinking it wasn't worth it. I sent Santa my Christmas wish to Matfer Bourgeat Coppers, but I doubt Santa's workshop has a culinary department. I baked the once-difficult Cannele Bourdelais in it twice, following the popular Clotilde recipe. The accompanying literature says not to use above 460 F, but I had to set the oven to 500 F a second time and then lower it to 475 F for a period of 15 minutes, then another 45 minutes for 400 F. It did not only withstood 2 times high temperature baking, but also cleaned well with hot soapy water. Remember I used beeswax and oil to grease the pan before baking. I've read that some people who have used silicone molds with the beeswax/oil combo have been forced to throw out their molds due to the difficulty of cleaning - but not this one. It's a keeper and I'm actually ordering another one so I can have a few if I'm making a large batch of dough. What a great deal for a great shape.
