New and Better Isn't Always Better

If you're used to traditional weight adjusters, this will take some getting used to. My old weights wiggle gently and make a noise as they cook. This sound lets me know how fast (or hot) my food is cooking, if there is enough water in the pot and of course if the pot is getting dangerously hot or maybe some food is choking the air. Venting are all very important things to keep in mind when cooking under pressure. This new-style regulator builds pressure quietly and then releases it suddenly and violently, spinning like a top and steam pouring out of side vents. This sudden explosive action made me wince the first time it worked. With this controller it is not possible to control cooking in the same way as with a traditional controller, resulting in food undercooking, overcooking and even running out of liquid. If ever a piece of food got into the air vent, you would never know until the safety valve tripped. It can get the job done, but certainly isn't as good or as safe as proven traditional-style weight controllers. New and improved isn't always better, and certainly not in my opinion.
