I recently made my first batch of hard cheeses and converted a wine cooler into a cheese cellar to properly age the cheese. A wine cooler itself does not heat up above 46 degrees inside, which is too cool for cheese to mature. I've tried this with the cooler on and off with frozen water bottles to keep the temp warmer than a wine cooler could give me. The frozen water bottles were too much work as they had to be put down constantly and it was too cold for the cooler when the power was on. I wasn't sure what to think of this thermostat controller as I had never used one. Much to my surprise, it works great and keeps my wine cooler at a constant temperature of around 56 degrees. What you do is connect the chiller to the thermostat controller and then connect the controller to a power supply. You set the temperature you want to maintain on the controller and it does the rest for you. It turns off the cooler when it gets too cold and turns the power back on when the temperature gets too high. If you're modifying a wine cooler to age cheese, this thermostatic controller is a must!
