
This lid doubles as an opening for the Anova Sous Vide (shown) and prevents water from evaporating during long cooking times (e.g. stews). You can also clip it over the bag of meat to keep the bag from filling with water if the zipper leaks. Sure, you could do the same with a paperclip, but the lid also traps moisture and provides insulation. For longer cooking times, I put potholders or a towel on the lid to keep warm and save energy.
