
Purchased for use in making 3-2-1 short ribs (google it for dozens of recipes) in a pellet smoker. For Stage 2, the recipes call for wrapping the ribs in foil and adding a cup of juice before placing them back in the smoker for two hours. Strong foil and a little care will do, but the foil easily punctures and the juice spills out. Now I put them in a pan and cover with foil that you can wrap around the rim of the pan. At around 225 F, the smoker never gets hot enough to warp the pan.
