I was skeptical about ordering this because I had never heard of Hast (Startup) and $100 is a lot for a new brand chef's knife. However, I had to replace a chef's knife that had let me down and wanted something good this time. That's good, and then something else. Straight out of the box it's razor sharp, sharp enough to shave with. But what really sets this chef's knife apart is its perfect weight and balance. I thought the picture of him balancing on rocks was fake, but it might actually be true. A good chef's knife should be an extension of your hand, mimicking its small movements, and this knife does the job brilliantly. The knife I replaced was only used for meat, but I think this one could replace my Wusthof meat chef's knife because, well. 5 amazing stars and I cannot recommend this knife highly enough.
