They are very sharp. I've been looking for a knife to cut bread dough and it worked better than a razor, better than anything I've tried. But both ended up breaking very soon after purchase with less than what I would call normal knife use. . We certainly did not abuse them, hammering bread, rinsing, cleaning with other knives. They're not strong enough to be kitchen knives, but they're so damn sharp that I'm considering buying another set and keeping them in a padded box just to use for slicing bread, gently washing hands, and hiding the box to be used by the rest of the family.
