I've never owned a professional knife so I'm writing my review through the eyes of a novice professional knife. I love to cook and don't know why it took me so long to get a "real" knife. The difference between a good knife like this and an ordinary cheaper knife (like the ones I have in my drawer) is comparable between day and night. I'm so used to sawing meat and vegetables and now I can bring out my inner chef with my new Okami chef's knife. I can chop a whole onion in seconds and chop raw beef with practically a finger. It's SHARP and I've already cut myself; just a little nickname but i gotta be more careful. The wide part of the knife next to the handle was to blame. I held the knife too close to this part and have since changed the way I hold the knife. This okami knife cuts straight through a ripe tomato. I can easily slice a tomato as thin as I want. It took me less than 10 seconds to cut the pineapple. I used to be afraid to cut a pumpkin with nuts. No longer! So I like the way it cuts. It is also very beautiful and comes with a great box and protective case. I like to keep it in a box, it's safer that way. Made from German steel which is easier to sharpen at home. I don't suppose I'll have to sharpen it often, but I plan to keep it sharp through my husband as I don't know how. The handle is very comfortable and easy to hold (just don't hold it too close to the end like I did) for big hacking jobs. I am very happy with the quality of this knife for the price. If I were Ramsay's chef I could find a reason not to give it 5 stars, but this knife newbie can't find any reason *not* to give this knife 5 stars. Will make a great gift!
