Standard on fillet knives

In the Northeast you only see Dexters knives on party boats. You catch more fish in a week than most people do in a lifetime. Knives are easy to sharpen and dull quickly; The relative softness of steel gives them flexibility and strength. Let's say you need to touch up the edge after about 20 pounds of fish. Slightly rough in appearance, they are uniquely inexpensive and can be used without hesitation under the most adverse conditions. The steel will develop a patina that will trap rust if you don't intentionally overstress it.
