The best fillet knife on the market

I have used Dexters knives for many years and they are incredibly durable. I left my 6 inch knife outside all winter and after 5 minutes of sharpening it was razor sharp again. The 8 inch knife is an excellent knife for skinning big game and cleaning fish.

Lightweight, durable and razor sharp

This knife's features are perfect for what it was designed for. The wood offers a good grip even when wet, and the blade is light, dense and razor sharp. Give it a nice patina to protect the metal from rust and you'll have a great knife for years to come.

A professional knife for the job, not just for show

This is a professional fish farming knife. While a stainless steel blade is easier to keep razor sharp and lasts longer than stainless steel, this knife has a carbon steel blade that will stain. It can also rust if not cleaned and dried immediately after use. If you want a shiny, beautiful knife, don't buy this model. If you're looking for a standard fish peeler, this is it.

New Dexter! - Cutlery & Knife Accessories

I have a Dexter that my friend gave me about 30 years ago and it's still strong but the blade has lost some width from sharpening. It was originally used to cut insulation, but I use it as a kitchen knife. I now have this new Dexter which I'm sure will outlive me and looks just as good quality as the old one. It should be noted that because this knife is made of carbon steel, which I prefer, this knife will rust and one day the blade will be almost black. Easy to sharpen and hold an edge.
