I waited 2 months to write my review because I wanted time to study it thoroughly. It started off with a bang, starting with a batch of chocolate chip cookies in under 8 minutes (first things first is my motto) followed by delicious grilled chicken. A few weeks later I cooked our 5# Grilled Rib Christmas Roast and they cooked perfectly despite my inexperience with the grill. Since then I've roasted a few more chickens and roasted pork loin. It's also great for cooking steaks that have been pan started. I look forward to cooking a turkey in a few weeks. Also, I saved all the bones and then roasted or broiled them to make beef broth and chicken broth. The oven met or exceeded my expectations for non-meat items, including many more cookies, a few cooked cobblers and cream cakes, a dozen loaves of bread, and plenty of cornbread. Cake and a birthday cake are on the list for next month. I dehydrated celery, carrots, and yams and made chicken, venison, and beef jerky. In most cases you have to make compromises. In this case I really, really wanted an interior light and some of their models have it. However, my main needs were large capacity, grill and unlimited cooking time, and this model gives me all of that. So I agree to put a flexible magnetized wireless light near the top dial and remind myself that I have the most desirable features got a cheap price. Some general pluses: It's a regular oven - doesn't set the table or wash dishes, no fryer, toaster etc - but it's exactly what I wanted. While the outer front and top heat up like any oven, the sides are well ventilated and barely get warm. I have no problem with butter, bananas, and tomatoes 2 inches apart on one side and a jar of hardened bacon fat and whipped honey on the other. I have limited countertop space so I appreciate not having to worry about bringing things too close. The cooking temperature is stable and accurate, but I relied on the thermometer for a couple of weeks to be sure. Temperature setting is done with an adjustable dial marked in 50-degree increments rather than a digital readout, but I find it handy. I like being able to easily raise or lower the temperature 5-15 degrees to control the degree of browning, rather than covering the food with foil. To compensate for convection, I usually set the temperature 25 degrees lower than the recipe calls for and reduce the time by about 10%. I recently discovered that I can brown baked goods extra without overcooking them by simply placing the baking sheet on the included rack instead of the rack. I don't make toast, but if I did, I'd put slices of bread in this pan. The timer can be set for 2 hours or indefinitely, a rare feature on countertop ovens. Cons: There are only two. light I mentioned earlier. Second, the chrome, including the knobs, is so bright that it's difficult to read the settings in certain lighting conditions unless I aim the light to fall on either side of the knobs. The size and font of black letters and numbers lose their brilliance. Overall I am very happy with my convection oven. It wasn't my first choice, or even my second, but I'm so glad I decided to replace my 35 year old Sharp with this. A good stove, like a reliable friend! I think this relationship will last for many years.
