These bags are perfect for laying out and writing. I have far more control over the use of these pouches than I have ever had with tip pouches or even tip bottles. I feel my piping is smoother and I decorate faster. In fact, you can cut the wrapper to mimic popular tips, like I did for making ruffles on my piñata cookies! The only thing that confuses me is that some packages are sealed offset which makes them unusable. Luckily there is enough in the set that you don't really notice. FYI, leave some room in the piping bags. The bag should be free in your hands so you can squeeze it well without cracking the rim. Also cut the seam line (perpendicular - imagine a T shape) so the line doesn't show up on your letter.
