I use this when making large pots of soup, stew or gumbo that take a long time to cook. Even on low settings, my gas stove ignites some of the pot's contents, making the whole batch fun. that prevents burning. I put it on low settings between the burner and the pot. Nothing has burned yet. I don't have to constantly stir the contents. A little discolored, but it will not affect the work. Think of the colors of the motorcycle exhaust pipe where it connects to the engine. Also, use a little common sense with the bare metal part of the pen when it's hot. You would use an oven mitt or oven mitt when handling cast iron pan or pot handles. It's no different. Good tackle. I am satisfied with its performance.
